Process

Extraction
-The first step in the production is the extraction of the juice of the agave plant by means of diffusers. Here the juices are obtained with inulin compositions of 10-18%.
Filtering
-On this phase, juices passes to a filtering and demineralization system in order to purify them, leaving only a mixture of water and inulin.
Hidrolysis
-After the extraction process is sent to a hydrolysis process, this is where the inulin chains are broken leaving the fructose molecules free in the mixture.
Evaporation
-From here inulin is passed into a vacuum evaporation system in which water is removed without changing the properties of the product, until reaching fructose concentrations of 65-72%.
